TASTING TEMPERATURE: 6-8°C

Vinification /

After the harvest the grapes are immediately started to a soft cold pressing, followed by the first fermentation that enhances the characteristic notes of the grape. After a period in steel of 4-6 months we proceed with bottling for a second fermentation and the foaming at a temperature of 14 ºC, zero dosage.

Ground / Clay – calcareous
Aging / 30-36 months in bottle on its lees at 12-13 ºC
Harvest / Mid – end of August
Colour / The color is pale straw yellow with greenish reflections, the perlage is very fine.
Nose / The scent is fresh and fragrant, reminiscent of yeast and bread crust.
Taste / In the mouth the taste is very fresh, dry and persistent.
Pairing / Ideal as an aperitif, fish dishes, vegetables and white meat.
